Sweet potato waffle with sunny side up egg and avocado

Ingredients

g sweet potato
80
g oats
4
eggs

ml almond drink

g parmezan cheese

avocado (in slices)

lime
coconut oil
pepper and salt

Preparation

Cook the sweet potato in water for 6-8 minutes. Then mash the potatoes with some pepper and salt. Add 2 beaten eggs, the almond drink, the oats and the cheese. Stir untill a smooth mixture. Put some oil on the waffle pan and bake the mixture for a few minutes. Meanwhile bake the sunny side up eggs in a pan with some coconut oil. Put the sweet potato waffles on a plate and top with the eggs, the slices avocado, pepper & salt and some limejuice. Enjoy!
